The day before opening, construction crews worked away at the new Mo’s, located in the Shilo Inn on the Prom. The room, with one of the most exquisite ocean views anywhere, brings Mo’s classics to Seaside.
Among the team, Jolee Bancroft worked in sweatshirt and jeans. Bancroft is the president of Newport Pacific Corp., which owns Mo’s.
What’s on the menu at Mo’s in Seaside?
“What’s not on the menu!” Bancroft replied. “Clam chowder, No. 1, fish and chips, halibut, cod. We have burgers for the nonseafood lovers, we have pastas — “
“Fish tacos are my favorite,” restaurant general manager Billie Edmonds put in.
Edmonds, who started with the company nine years ago in Lincoln City, and worked her way up the coast, including as general manager of the Cannon Beach Mo’s.
How did this new location get its start?
“The owners of Shilo contacted us and they said, ‘Would you be interested?’” Bancroft said. “I said we have to go check it out. It fit exactly what we do. We look for locations that are amazing and we make the space amazing.”
Bancroft said she anticipates about 90 employees at the height of the summer, and 50 full-time workers in winter.
With a Mo’s in Cannon Beach and a Mo’s in Astoria, will there be too many Mo’s for the North Coast?
“I think there’s going to be plenty of business for all of us,” Bancroft said.
